Cooking in an Airstream, with Keep Your Daydream

Airstreaming is all about travel, community, and making memories. And one of the best ways to make those memories last is through sensory experiences—especially cooking and eating. Tricia Leach of Keep Your Daydream believes that the best trips always include delicious meals. In fact, even the toughest travel days can be redeemed by one unforgettable food experience! 

Tricia and Marc Leach have been RV traveling with their family for a decade, and in that time they’ve learned just about everything there is to know about life on the go. One thing Tricia has mastered is first-class food. She says there’s no reason that camping, hiking, and being active can’t also include rave-worthy meals. Why eat a smashed PB&J when you can have pesto chicken and pasta, or the best tacos you’ve ever tasted? Taste of the States 

Tricia recently released a new cookbook, Taste of the States, which is designed to be both a guide and an adventure. The book takes travelers on a state-by-state food trip, with recommended itineraries and history, highlighting at least one local dish and recipe per state. With easy-to-follow instructions, helpful side notes, and epic photos, it’s perfect for road trippers, food lovers, and busy home cooks alike.

Sensory Memories 

“There’s no better place to have a great meal than on a special trip,” Tricia says. “It’s such a sensory experience. Maybe you spent the day seeing waterfalls and rock formations, and smelling pine trees and sage, then you sit down and start tasting things. You really lock in those memories.”  

When your table is set at the dinette or outside under the Airstream awning – right in the heart of a state or national park – you can truly take it all in. “I love to cook special meals that taste as good as a restaurant but are enjoyed at a picnic bench with the kids and the dog,” Tricia says. Just because you’re miles from fine dining doesn’t mean you can’t savor dishes worthy of white tablecloth service. 

Tricia also notes that for many with dietary restrictions or preferences, cooking on the go is healthier and often cheaper. She recalls that when her kids were younger and they’d stop for food, it would always end up being expensive and unsatisfying. “We called them the $19 chicken nuggets. Everybody would sit down to not-so-great food, and they’d be absolutely starving again in an hour.”  By prepping and cooking on the go, you can have what you like and actually feel good about it.

Make Traditions 

There’s nothing like your favorite foods and meals to signal that you’re on vacation. Tricia encourages people to lean into making favorite breakfasts and dinners at camp. And one of her mantras is, “Cook once, eat twice,” meaning, turn tonight’s dinner into tomorrow’s lunch.  

“We love doing taco nights because if you hit a farmers market, you can pretty much get everything there,” Tricia says. “We also do a steak and potato bar: that's a really easy, fantastic dinner because you can grab any kind of fresh lettuce at a farmers market, steaks, potatoes, and it's so easy.” Tricia and Marc love to be outside, grilling and cooking, because it’s fun and relaxing.  

“Trish makes chicken for taco night,” Marc explains. “She'll fill the Blackstone with chicken, and then after dinner we'll dice it up, put it in the fridge, and it becomes a chicken salad, or even a quinoa bowl the next day.” Marc and Tricia work smarter, not harder, when it comes to cooking. “If we go on a hike the next day, we’ll take the quinoa bowls with little Ziploc bags of pesto dressing on the side. People will be looking at us at the top of a mountain like, ‘that’s not fair,’” Marc laughs.  

Food Destinations 

There are certain places Tricia and Marc love returning to specifically for their culinary treasures, and Santa Fe, New Mexico remains at the top of their list. “Santa Fe is such a foodie town,” Tricia says. “The ingredients there just shine—from the green chili to the red, not to mention the sopapillas.” They’re equally charmed by the small towns along California’s Pacific Coast Highway, where fresh produce is nonstop; and by Mystic, Connecticut, with its abundance of just‑caught seafood. “There are so many food destinations out there. You just have to keep your eyes peeled for roadside markets and food stands,” Tricia adds.
