Olympia Provisions is the outgrowth of salumist Elias Cairo’s love for delicious charcuterie, made the right way. Growing up as a first-generation Greek-American, Cairo’s father made charcuterie at home. As a young adult, the inspired Cairo took an adventure across Europe to visit his roots and study under the culinary masters of salume.
He brought his knowledge and his deep appreciation for the art of making charcuterie back home with him. In 2009, Cairo established Olympia Provisions, Oregon’s first USDA-approved salumeria.
They start with antibiotic-free, 100% lean Pacific Northwest pork.
